VEGETABLE PULAO RECIPE


Ingredients to serve three:
1.  Green peas - 200 g
2.  Capsicum - 1
3.  Basmati rice 250 g
4.  Spices like saunf (sombu) - 1 pinch , biriyani leaf - 1, cloves - 3 (krambu), cinnamon - 1 (lavanga pattai), cardamom - 2 (yellakai)
5.  Cooking oil - 2 tablespoon
6.  Dalda - 50 g
7.  Onion - 1
8.  Tomatoes - 2
9.  Ginger garlic paste - 1 teaspoon
10. Turmeric powder - 1/2 teaspoon
11. Chilli powder - 2-1/2 tablespoon
12. Salt to taste
13. Lemon
14. Mint leaves - small amount

Measurement to add water for rice:
Two tumblers(glasses) of water for one tumbler of rice.

Method:
1.  Soak rice in water for 30 mins.
2.  Keep the cooker on flame. When the cooker gets hot enough, pour the oil and dalda.  When the dalda melts down, add the above spices.  Once the spices pop, add ginger-garlic paste, onions, tomatoes, peas, capsicum and mint leaves.  Stir well.
3.  Add turmeric powder, chilli powder and salt to taste.  Fry these with oil for 5 mins.


4.  Now add water as per above measure and wait till they foam up.  Meanwhile filter the soaked rice and keep it aside.

5.  When foam comes from the cooker, add the filtered rice to it and squeeze some lemon juice then close the cooker  Pressure cook the rice for 3 sounds.


Tasty vegetable pulao is ready just in minutes. This would suit very well with onion raita or salad with scraped onion, cucumber and carrot.  More to come from Grace Dishes.
